EASY ORGANIC LEMON TART

INGREDIENTS

¼ cup or raw or organic sugar

2 organic lemons

2/3 cup of organic 35% cream

3 organic eggs

1 large organic readymade pie shell or 12 little ones


INSTRUCTIONS

Preheat your oven at 350 and ensure the rack is in the center of the oven.

Pierce the base of the pie shell several times and bake on a baking tray in the oven for 10-15 minutes until golden brown.  (Keep your eyes on it; you don’t want to burn it).

Grate the zest (yellow part!) of the lemon and then juice. Place sugar, eggs, cream, in a bowl with the lemon rind and juice. Whisk together until blended, and then carefully pour into the cooked pie shell.

Return to the oven and cook for a further 20-30 minutes until set.  Meaning, the center does not jiggle when you tap the side of the pie shell.

Let cool on a wire rack until it reaches room temperature. You can cool it in the fridge but the shell will be somewhat soggy if you do.
