INGREDIENTS
4 organic chicken breasts split
3 tbsp. Organic olive oil
2 cans (14 1/2 oz. each) organic Italian style stewed tomatoes
1 can (6 oz.) organic tomato paste
1 large or two small organic onions (yellow is fine but white is better!)
2 c. Sliced organic mushrooms
1 tsp. Organic dry crushed basil
1cup organic red wine (Merlot, Chianti or Zinfandel
3 cloves organic garlic (chopped fine)
A small bunch of fresh organic basil
½ teaspoon organic crushed chilli peppers
Salt and pepper
INSTRUCTIONS
Remove skin from chicken breasts. Fry with the olive oil (in the pot you will be using to make the chicken cacciatore) until brown – drain the oil and set aside the chicken pieces. Add tomatoes, garlic, crushed chilli peppers, mushrooms, dry basil, onions and salt and pepper to taste. Let this mixture take some color then add tomato paste, canned tomatoes, wine and cooked chicken Cover and simmer 30-40 minutes or until the chicken is nice and tender. Just before serving, tear the fresh basil into the sauce and enjoy the aroma. Chicken cacciatore may be served atop fresh cooked organic pasta of your choice or over freshly made organic polenta.
